Souper Bowl!


Sometimes you stumble across a recipe that defies convention. One that intrigues you, but leaves you wondering can it be real? As someone who hates to be disappointed, who is easily seduced by gorgeous photos, I present you, my fellow cooks, a unicorn. This recipe is mythical because its simple, fast AND amazingly tasty. Friends, the soup is not too good to be true.

This bowl is full of rich flavor. Warming you from the inside, this soup is an ideal companion for a chilly winter night. Something you can curl up on the couch with and enjoy while reading a magazine, listening to the latest Serial podcast or cringing during the recent episode of the Bachelor (Ben stop kissing ALL the girls, geesh). Its a snap to prepare (read: no roasting) so don’t save it for the weekend, any Monday night will do!

 

Cauliflower, Fennel & Celery Root Soup

1/4 cup olive oil, plus extra for serving

2 cups yellow onion, chopped (2 medium sized onions)

2 cups celery root, medium dice

2 cups fennel, cored, stalks removed, medium dice

1 head cauliflower, cored and cut into florets

32 oz chicken stock, divided

3 teaspoon kosher salt, plus more for seasoning

2 Tablespoon heavy cream

3 oz pancetta, fried

Heat olive oil in a heavy-bottomed round oven. Add onions and saute over medium-low heat for 8-10 minutes, stirring occasionally, until tender. Do not brown the onions. Add celery root and fennel. Saute for another 5 minutes, stirring occasionally. Add cauliflower to pot, pour in 3 cups of stock and salt. Bring to a boil, lower heat, cover and simmer 20 minutes. Vegetables should be very tender.Add remaining stock and 1 cup of water. Bring pot to a boil, lower heat and simmer uncovered for 20 minutes. Remove from heat.

Working in batches puree soup in a Vitamix (preferred) or blender. Be sure to only fill container half full, otherwise it will overflow. Process until well blended. Pour blended soup back into pot, stir in cream and taste. Add salt as needed. Reheat soup over medium-low heat. Meanwhile fry pancetta and drain on a paper towel-lined plate.

Ladle hot soup into bowls, top with pancetta and drizzle with olive oil. Enjoy! Clap your hands and go back for seconds!
